Spice up the menu this summer with this delicious curry beef from Cameroon.
What You'll Need:
1 cup yellow onions, coarsely chopped
2 Tbs. curry powder (use a good quality)
2 Tbs. salt
1 tsp. black pepper
1/2 cup vegetable oil
4 Ibs. boneless beef chuck cut in 2" squares
1/2 fresh pineapple
1/2 cup raisins
Fresh coconut
Mango
2 cups rice
Optional Ingredients:
Chopped peanuts
Chopped hard-boiled eggs
Chopped cucumber
Shredded coconut
How to Make the Curry: Saute the yellow onions with the curry powder, salt, black pepper and vegetable oil until onions are soft. Add 4 lbs. of the beef chuck. Cover pan immediately and do not allow meat to brown. Simmer for one hour slowly. Add the pineapple, trimmed and cut into 2" chunks. Add the raisins. Pierce the coconut and drain the water from it. Add water to coconut water to make 2 cups. Add to stew. Simmer until meat is completely tender, about one hour. Add mango, peeled and cut into long strips. Add half the coconut cut into 1" squares.
