African Recipe of the Week - Nigerian Spicy Scrambled Eggs

Serve up an African breakfast with these spicy scrambled eggs from Nigeria! They're easy, fast, and fun. Here's how to make them: 

What You Need: 

8 eggs 

4 tomatoes (sliced and chopped) 

1 chili pepper (sliced) 

1 onion (sliced) 

1 clove of garlic (crushed) 

3 green peppers (seeded and chopped) 

1 tsp. fresh thyme 

3 tsp. fresh thyme 

3 tbsp. groundnut oil (or other cooking oil of your choice) 

Salt to taste 

How to Prepare The Eggs: Heat the oil in a large frying pan, add the onion and cook until it begins to color. Add the peppers and cook for 5 minutes, then add the tomatoes, garlic, chilli and seasoning. Stir and cook for another 5 minutes. Meanwhile, lightly whisk the eggs with a little salt and stir into the tomatoes. Reduce the heat and cook, stirring constantly until they are creamy and well combined for about 8 minutes. Serve hot.
