With the nicer weather starting, what says summer more than mango salsa? With a total preparation time of 1 hour and 10 minutes, here's a delicious recipe perfect for any gathering. Serve as a side with chips, pita bread, or as a topping on meat, fish or poultry dishes. Enjoy!
Ingredients you'll need:
1, 2 or 3 Mangoes
1 Red Onion
½ Cucumber
1 Hot Chilli
1 Handful Coriander (a healthy handful)
1 Pouring Lemon or Lime Juice
Instructions: Dice mangoes in 1/2 inch cubes, dice (small) red onion, dice (smallish) half a cucumber. Chop up the hottest chilli you can find in your kitchen. Chop a good handful of fresh coriander. Pour on lime or lemon juice. Mix well. Leave in fridge for an hour. Makes 1 bowl
